This is comfort food territory, what with the fried rice and now the beef stew. Next time we’ll do something a bit more hard core, but this is still weekday dinner territory we’re working through.
Ingredients:
Onions - 3
Stew Meat - 4 lb
Ketchup - Large bottle
Star Anise: 8-10
Carrots: 4-8 depending on size
2 Tablespoons of oil
Cut meat to chunks.
Cut onions to strips.
Cut carrots to chunks.
Bring pot of water to boil.
Boil meat for 3 minutes. Drain.
Stir fry star anise with oil, add in onions, stir fry until slightly browned.
Add in meat, water to cover, and ketchup until color looks delicious. Keep in mind water boils off and that the ketchup flavor will grow stronger.
Simmer for 1.5 hours, add in carrots and simmer until soft. Optionally you can add celery with the carrots.
Let it cool and fridge overnight for better flavor the next day.
Serve over rice.
Nothing better than comfort food though. I have to try that, sound pretty good.
